Ingredients:
2 lb rotini pasta (tri-color or classic)
4 cups diced cucumber (about 3 small cucumbers)
4 cups cherry tomatoes, halved
1½ cups grated Parmesan cheese
2 cups buttermilk
2 cups mayonnaise
2 packets (2.4 oz total) ranch restaurant-style dressing mix
Directions:
Bring a large pot of salted water to a boil. Cook the rotini pasta until al dente according to package instructions. Drain and rinse with cold water to cool completely.
Dice the cucumbers and halve the cherry tomatoes. Set aside.
