Creamy Wild Rice Mushroom Soup

Ingredients (Serves 4):
1 cup wild rice, rinsed (high in fiber & protein)

4 cups vegetable broth or chicken broth

Preparation:
In a medium pot, cook the wild rice according to package instructions (usually 30–40 minutes) until tender.
Heat olive oil in a large pot over medium heat. Add onions, garlic, and mushrooms. Cook 5–7 minutes until mushrooms are softened and fragrant.
In a separate pan, melt butter over medium heat. Stir in flour and cook 1–2 minutes until it forms a smooth paste.
Slowly whisk in vegetable or chicken broth. Then add the heavy cream. Stir until the mixture is smooth and thickened, about 3–5 minutes.
Add the cooked wild rice into the soup base. Stir well and let simmer 10 minutes for the flavors to blend beautifully.
