    Luscious Lime-Chili Shrimp & Creamy Avocado Bowls with Fresh Mango Salsa

    These lime-chili shrimp avocado bowls are bursting with bold flavors, creamy textures, and vibrant colors. Juicy shrimp seasoned with chili and cumin are paired with buttery avocado, fluffy quinoa or rice, and a refreshing homemade mango salsa, all finished with a zesty lime-chili yogurt sauce. A perfect quick, healthy bowl meal for lunch or dinner!

    Ingredients:

    For the Lime-Chili Shrimp
    1 lb large shrimp, peeled and deveined
    1 tbsp olive oil
    1 tsp chili powder
    ½ tsp ground cumin
    Salt & black pepper, to taste
    For the Bowl Base
    2 ripe avocados, diced
    1 cup cooked quinoa or rice
    ¼ cup fresh cilantro, chopped
    For the Fresh Mango Salsa
    1 ripe mango, diced
    ¼ red onion, finely diced
    1 jalapeño, seeded & minced (optional)
    Juice of 1 lime
    Salt, to taste
    For the Creamy Lime-Chili Sauce
    ¼ cup plain Greek yogurt or sour cream
    Juice of ½ lime
    ½ tsp chili powder
    Pinch of cayenne pepper (optional)
    Salt, to taste

    Directions:

    Cook the Shrimp: Toss shrimp with olive oil, chili powder, cumin, salt, and pepper. Cook in a skillet over medium-high heat for 2–3 minutes per side until pink and opaque.
    Make the Mango Salsa: Combine mango, red onion, jalapeño, lime juice, and salt in a bowl. Mix well and set aside.
    Prepare the Sauce: Whisk Greek yogurt, lime juice, chili powder, cayenne, and salt until smooth and creamy.
    Assemble the Bowls: Divide quinoa or rice between bowls. Top with avocado, shrimp, mango salsa, and drizzle generously with lime-chili sauce. Garnish with cilantro and serve fresh.
