Ingredients:
1 cup cornmeal
½ cup all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon salt
1 tablespoon sugar
½ cup finely chopped onion
1 small green onion, chopped
1 large egg
¾ cup buttermilk
Oil, for frying
Directions:
In a large bowl, combine cornmeal, flour, baking powder, baking soda, salt, and sugar.
Stir in the chopped onion and green onion until evenly mixed.
Add the egg and buttermilk, mixing until a thick, spoonable batter forms.
Heat oil in a deep skillet or fryer to 175°C (350°F).
Drop spoonfuls of batter carefully into the hot oil.
Fry for 3–4 minutes, turning once, until golden brown and crispy.
Remove with a slotted spoon and drain on paper towels.
Lightly sprinkle with salt and serve warm.
