Hearty Beef Barley Soup

Ingredients:
2 pounds beef chuck, cubed
3 tablespoons olive oil
1 medium onion, diced
2 ribs celery, diced
4 medium carrots, diced
3 cloves garlic, minced
7 cups low-sodium beef broth
1 tablespoon Worcestershire sauce
3 sprigs fresh thyme
1 cup pearl barley
Salt & black pepper, to taste
¼ cup fresh parsley, minced
Directions:
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add beef cubes and brown on all sides. Remove and set aside.
In the same pot, add onion, celery, and carrots. Cook for 5–6 minutes until softened. Stir in garlic and cook 1 minute more.
Pour in 1 cup of the beef broth, scraping up any browned bits from the bottom of the pot for extra flavor.
Return beef to the pot. Add remaining beef broth, Worcestershire sauce, thyme, barley, salt, and pepper.
Bring to a boil, then reduce heat and simmer covered for 1 to 1½ hours, until beef is tender and barley is fully cooked.
Remove thyme sprigs, stir in fresh parsley, adjust seasoning, and serve hot.
