Ingredients:

½ lb large shrimp, peeled and deveined
½ lb rigatoni pasta (or mixed pasta shapes)
½ cup sun-dried tomatoes, chopped
½ cup grated Parmesan cheese
1 tbsp olive oil
2 tbsp butter
4 cloves garlic, minced
1 cup heavy cream
½ cup chicken or seafood broth
¼ tsp crushed red pepper flakes
1 tsp Italian seasoning
Salt & black pepper, to taste
1 tbsp fresh parsley, chopped (garnish)

Instructions:

Bring a large pot of salted water to a boil and cook pasta until al dente. Drain and set aside. This easy pasta recipe works beautifully with rigatoni or mixed pasta shapes.

Heat olive oil and 1 tbsp butter in a skillet over medium heat. Add shrimp, season with salt and pepper, and cook 1–2 minutes per side until golden and tender. Remove and set aside.

In the same skillet, add remaining butter and garlic. Sauté until fragrant, then stir in sun-dried tomatoes for bold Mediterranean flavor.

Pour in heavy cream and broth. Add red pepper flakes and Italian seasoning. Simmer gently until slightly thickened, then stir in Parmesan cheese until smooth and creamy.

Return shrimp and pasta to the skillet. Toss until everything is well coated in the creamy sauce. Garnish with parsley and extra Parmesan. Serve hot and enjoy!
