Spinach & Mushroom White Lasagna

Ingredients:
For an 8-Serving Lasagna
12 lasagna noodles
3 cups fresh spinach
2 cups sliced mushrooms
2 tbsp olive oil
3 cloves garlic, minced
3 tbsp all-purpose flour
2 cups milk
1 cup heavy cream
1½ cups ricotta cheese
2 cups shredded mozzarella cheese
½ cup grated parmesan
1 tsp Italian seasoning
Salt & pepper to taste
Optional: fresh parsley for garnish
Directions:
Boil the noodles according to the package instructions. Drain and set aside.
Heat olive oil in a skillet over medium heat.
Add mushrooms and cook for about 5 minutes until browned.
Stir in spinach and garlic, cooking until spinach is wilted.
Season with salt and pepper and set aside.
In a saucepan, melt 2 tbsp butter.
Whisk in the flour and cook for 1 minute to form a roux.
Slowly whisk in milk and heavy cream until smooth and thickened (5–7 minutes).
Add Italian seasoning, salt, and pepper.
Preheat oven to 375°F (190°C).
Grease a 9×13 baking dish.
Spread a thin layer of white sauce at the bottom.
Layer in this order:
Lasagna noodles
Mushroom-spinach mixture
Ricotta dollops
White sauce
Mozzarella
Repeat for 3 layers, then top with remaining sauce, mozzarella, and parmesan.
Cover with foil and bake 25 minutes.
Remove foil and bake another 15 minutes until golden and bubbly.
Let rest 10 minutes before slicing.
