Golden Garlic Mushroom & Spinach Sauté

A quick, flavorful, and nutrient-packed veggie side dish made with earthy mushrooms, fresh spinach, aromatic garlic, and a silky olive-butter sauce. Perfect for weeknight dinners, healthy meal prep, or a light low-carb option.

Ingredients:

2 tbsp olive oil
1 tbsp unsalted butter
4 cups fresh baby spinach
2 cups sliced cremini or button mushrooms
3–4 garlic cloves, minced
½ tsp crushed red pepper flakes (optional)
Salt & freshly ground black pepper, to taste
1 tbsp chopped fresh parsley
½ tsp lemon juice (optional, for freshness)

Instructions:

Heat olive oil and butter in a large skillet over medium-high heat.
Spread mushrooms in a single layer and let them brown 3–4 minutes without stirring.
Stir and cook until they turn golden and tender, about 7–8 minutes total.

Lower heat to medium.
Add minced garlic and red pepper flakes; cook 30 seconds until fragrant.
Toss in spinach and cook 2–3 minutes, just until wilted.
Season with salt and black pepper.

Optional: add a splash of lemon juice for brightness.
Garnish with fresh parsley.
Serve warm as a healthy side dish.
