Ingredients:
For the Lobster Tails & Garlic Butter
20 oz (2) lobster tails
1/2 cup butter, softened
3 tbsp olive oil
2 heads garlic
1/2 tsp salt
1 onion
Fresh parsley, chopped
For the Scallops & Lemon Orzo
8 scallops
2 tbsp garlic butter
1 cup orzo
1 cup seafood stock
1/2 cup extra seafood stock
4 tbsp Parmesan cheese
4 tbsp lemon juice
Salt & pepper
Fresh parsley

Instructions:
Preheat oven to 400°F (200°C).
Slice ½ inch off each garlic head, drizzle with olive oil, wrap in foil.
Cut onion into wedges, drizzle with oil, wrap in foil.
Roast 40–60 minutes until garlic is caramelized and onion is tender.
Let butter soften at room temperature.
Squeeze roasted garlic into the butter.
Add salt and mash until smooth and creamy.
Melt 2 tbsp garlic butter in a skillet over medium heat.
Pat scallops dry for a perfect golden crust.
Sear 1–2 minutes per side until lightly browned.
Remove and set aside.
Add 1–2 tbsp lemon juice + splash of seafood stock to lift the browned bits.
Add orzo and total 1½ cups seafood stock.
Simmer 9 minutes until al dente.
Stir in lemon juice, Parmesan, parsley, salt, and pepper.
Fold in the seared scallops and remove from heat.
Use kitchen scissors to cut through the top of each shell.
Lift the lobster meat on top (keep attached).
Bake 10–12 minutes until opaque and bright red.
Do not overcook lobster turns rubbery.
Plate lemon Parmesan orzo with scallops.
Top with baked lobster tails.
Add roasted onions and lemon wedges.
Spoon extra garlic butter over the top.
