    Quick & Saucy Shrimp Stir-Fry with Veggies

    This Quick & Saucy Shrimp Stir-Fry is the perfect fast and flavorful healthy shrimp recipe for busy weeknights. Loaded with tender shrimp, crisp broccoli, fresh green beans, and sweet carrots, all tossed in a glossy honey garlic stir-fry sauce, this dish is a nutritious, colorful, and family-friendly meal ready in just 20 minutes.

    Ingredients:

    Stir-Fry
    1 lb shrimp, peeled & deveined
    2 cups broccoli florets
    1 cup green beans
    1 cup sliced carrots
    1 tbsp olive oil
    Stir-Fry Sauce
    3 tbsp soy sauce
    2 tbsp honey or brown sugar
    1 tbsp rice vinegar or lemon juice
    2 cloves garlic, minced
    1 tsp ginger (optional but recommended)
    ½ cup water or broth
    1 tsp cornstarch + 2 tsp water (slurry)
    Seasonings
    Salt & pepper
    Optional: chili flakes for heat

    Directions:

    In a bowl, whisk together soy sauce, honey, vinegar or lemon juice, garlic, ginger, and water. Set aside.

    Heat olive oil in a large skillet or wok.
    Add broccoli, carrots, and green beans.
    Sauté 4–5 minutes until crisp-tender.

    Add shrimp directly to the veggies.
    Season with salt and pepper.
    Cook 2–3 minutes until the shrimp turn pink and opaque.

    Pour in the prepared stir-fry sauce.
    Bring to a simmer.
    Stir in the cornstarch slurry and cook until the sauce becomes glossy and slightly thickened.

    Serve hot over rice, noodles, quinoa, or enjoy low-carb as is.
