Healthy Shrimp and Pepper Stir-Fry
A fast and vibrant weeknight meal made with juicy shrimp, rainbow bell peppers, and a glossy stir-fry sauce. This easy Asian-inspired shrimp recipe is rich in lean protein, antioxidants, and essential vitamins ready in just 25 minutes!
Ingredients (Serves 4):
1 lb shrimp, peeled and deveined
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 small onion, sliced
3 cloves garlic, minced
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp cornstarch
1/4 cup water
2 tbsp vegetable oil
Salt & pepper to taste
Instructions:
In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, and water. Set aside.
Heat 1 tbsp oil in a wok or large skillet over medium-high heat.
Add shrimp and sauté for 2–3 minutes until pink. Remove and set aside.
Add remaining oil, garlic, and onion. Cook 1–2 minutes.
Add all bell peppers and stir-fry 3–4 minutes until tender-crisp.
Return shrimp to the pan and pour in the sauce. Toss until coated and heated through.
Season with salt and pepper. Serve immediately over rice or noodles.
Notes:
Add chili flakes or sliced jalapeño for a spicy kick.
Delicious with jasmine rice, brown rice, or stir-fry noodles.
