    Upside-Down Pear & Almond Cake

    A melt-in-your-mouth caramelized pear cake topped with crunchy almonds and a buttery, soft crumb. This upside-down pear almond dessert is simple, elegant, and perfect for fall baking or holiday gatherings.

    Bake time: 35–40 min

    Ingredients:

    Caramel & Fruit Layer
    120g sugar
    40g butter
    4 ripe pears (peeled and sliced)
    40g slivered almonds
    Cake Batter
    120g softened butter
    100g sugar
    2 eggs
    160g flour
    1 tsp baking powder
    40ml milk
    1 pinch of salt

    Instructions:

     

    Melt the sugar in a saucepan until it turns golden. Add the butter and whisk until smooth.
    Butter your cake pan, arrange the sliced pears in a beautiful pattern, and pour the caramel over the top.

    Sprinkle the slivered almonds evenly over the caramel-coated pears for a delicious crunchy layer.

    Beat the softened butter and sugar until creamy and fluffy.
    Add the eggs one at a time.
    Mix in the flour, baking powder, and salt.
    Pour in the milk to create a smooth, lump-free batter.

    Gently pour the batter over the pears without shifting them.
    Bake at 180°C (350°F) for 35–40 minutes, or until a knife inserted in the center comes out clean.

    Allow the cake to rest for 10 minutes.
    Invert onto a serving plate to reveal the glossy caramel, tender pears, and toasted almonds.

    Tip:

    Use a silicone mold for easier unmolding and a perfect fruit layer every time.

    Variation:

    Swap almonds for chopped pecans or walnuts for a deeper, nuttier flavor.

    Advanced Tip:

    For extra-soft, melt-in-your-mouth pears, simmer them in the caramel for 5 minutes before placing them in the pan.
