    Creamy Spinach Artichoke Chicken Skillet

    A rich, flavorful, one-pan chicken dinner loaded with protein and creamy spinach-artichoke goodness! Perfect for busy weeknights, low-carb meals, and comfort food lovers.

    Ingredients:

    For the Chicken
    2 large chicken breasts, sliced in half horizontally
    1 tbsp olive oil
    1 tsp garlic powder
    1 tsp paprika
    Salt & black pepper, to taste
    For the Spinach Artichoke Sauce
    1 cup fresh spinach, chopped
    ½ cup canned or jarred artichoke hearts, chopped
    ¼ cup cream cheese
    2 tbsp Greek yogurt or sour cream
    2 tbsp grated Parmesan cheese
    1 garlic clove, minced
    ¼ tsp crushed red pepper flakes (optional)
    Salt & pepper, to taste

    Directions:

    Heat olive oil in a large skillet over medium heat. Season chicken with garlic powder, paprika, salt, and pepper.
    Sear chicken for 3–4 minutes per side until golden brown and mostly cooked. Remove and set aside.
    In the same skillet, sauté the minced garlic for 30 seconds.
    Add spinach, artichokes, cream cheese, Greek yogurt, Parmesan, red pepper flakes, salt, and pepper. Cook until smooth, creamy, and warmed through.
    Return chicken to the pan, nestling pieces into the creamy mixture. Cook another 2–3 minutes until fully cooked.
    Serve hot, with the creamy spinach-artichoke sauce spooned over the top.
