    Cheddar Bay Chicken Pot Pie

    The ultimate cozy comfort food: tender shredded chicken, creamy seasoned sauce, mixed veggies, and a fluffy Cheddar Bay biscuit topping baked to golden perfection. This recipe is quick, hearty, and family-friendly perfect for busy weeknights or cold evenings!

     

    Ingredients:

    1 can cream of chicken soup
    1 cup sour cream
    3/4 cup milk
    1 tsp garlic powder
    1 tsp onion powder
    1 tsp black pepper
    1 tsp Herbs de Provence (or 1/2 tsp poultry seasoning)
    4 cups cooked shredded chicken (rotisserie recommended)
    1 (10 oz) bag frozen mixed vegetables, thawed
    Cheddar Bay Biscuit Topping:
    1 (11.36 oz) box Red Lobster Cheddar Bay Biscuit Mix
    3/4 cup cold water
    1/2 cup shredded sharp cheddar cheese
    4 tbsp melted butter
    Seasoning packet from the biscuit mix

    Instructions:

    Preheat the Oven
    Preheat your oven to 400°F (200°C).
    Make the Creamy Filling
    Mix the cream of chicken soup, sour cream, milk, garlic powder, onion powder, pepper, and herbs.
    Stir in shredded chicken + thawed veggies until creamy and well coated.
    Assemble the Base
    Spread the filling into a greased 9-inch pie dish or medium baking dish.
    Prepare Biscuit Topping
    Mix the Cheddar Bay Biscuit Mix, water, and seasoning packet until just combined.
    Fold in cheddar cheese.
    Top the Pot Pie
    Drop or spread the biscuit mixture on top of the creamy filling.
    Bake to Golden Perfection
    Drizzle melted butter on top.
    Bake 25–30 minutes, until the biscuits turn golden and the filling is bubbling.
    Rest & Serve
    Let it cool slightly, then enjoy a warm, cheesy, comforting slice!
