    2 cups mashed potatoes (fresh or leftover)

    1/4 teaspoon garlic powder
    Salt and pepper, to taste
    1/2 cup breadcrumbs (optional, for extra crispiness)
    Non-stick cooking spray or oil, for greasing

    Directions:

    Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a muffin tin with non-stick spray or oil.

    Mix Ingredients: In a large mixing bowl, combine mashed potatoes, shredded cheddar cheese, beaten eggs, Parmesan, green onions, garlic powder, salt, and pepper. Mix until smooth.

    Add Crunch (Optional): For a crispier texture, gently fold in breadcrumbs.

    Fill Muffin Tin: Spoon the potato mixture into the greased muffin tin, filling each cup about 3/4 full.
