    Slow Cooker Beef and Mushroom Stew

    Make the ultimate slow cooker beef and mushroom stew! This hearty beef stew is full of tender beef, savory mushrooms, and rich herbs. Perfect family dinner recipe that’s easy and slow-cooked to perfection.

    Ingredients:

    2 lbs beef stew meat, cut into 1-inch pieces
    Salt and pepper, to taste
    2 tbsp olive oil
    1 large onion, diced
    3 cloves garlic, minced
    8 oz mushrooms, sliced
    3 cups beef broth
    1/4 cup Worcestershire sauce
    2 tbsp tomato paste
    1/4 cup flour
    1 tsp dried thyme
    1 tsp dried rosemary
    Fresh parsley, chopped, for garnish

    Directions:

    Season the beef stew meat with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the beef until browned, about 5 minutes. Transfer to the slow cooker. Searing beef locks in juices for tender, flavorful meat.

    In the same skillet, cook onions and garlic for 2-3 minutes until softened. Add to the slow cooker for aromatic flavor in your slow cooker beef stew.

    Add sliced mushrooms, beef broth, Worcestershire sauce, tomato paste, thyme, and rosemary. Stir well for a rich, savory beef and mushroom stew packed with umami flavor.

    Whisk flour with water to make a slurry, then add to the slow cooker. This creates a perfectly thick and hearty beef stew.

    Cover and cook:
    LOW for 7-8 hours, or
    HIGH for 4-5 hours, until beef is tender.

    Garnish with fresh parsley and serve over mashed potatoes or egg noodles for a hearty family dinner.
