    Meatball Soup with Spinach and Parmesan

    Warm up your soul with this Tuscan-Style Creamy Meatball Soup a rich, comforting bowl filled with juicy homemade meatballs, tender pasta, fresh spinach, and a creamy Parmesan-infused broth. Perfect for cozy family dinners or chilly nights, this one-pot soup brings the flavors of Italy straight to your kitchen!

    Ingredients:

    For the Meatballs:
    500g (1 lb) ground beef
    1 egg
    ½ cup breadcrumbs
    ¼ cup grated Parmesan cheese
    2 cloves garlic, minced
    2 tablespoons chopped parsley
    1 teaspoon Italian seasoning
    Salt and pepper, to taste

    For the Soup:
    1 tablespoon olive oil
    1 onion, finely chopped
    2 carrots, diced
    2 celery stalks, diced
    3 cloves garlic, minced
    4 cups chicken or vegetable broth
    1 cup heavy cream
    1 cup small pasta (ditalini, orzo, or elbow)
    2 cups baby spinach leaves
    ½ cup grated Parmesan cheese
    1 teaspoon chili flakes (optional)
    Salt and pepper, to taste

    To Serve:
    Fresh basil or parsley, for garnish
    Extra Parmesan, for sprinkling

    Directions:

    In a large bowl, mix ground meat, egg, breadcrumbs, Parmesan, garlic, parsley, Italian seasoning, salt, and pepper. Roll into small balls (about 1 inch in size).

    Heat olive oil in a large pot over medium heat. Brown the meatballs on all sides until golden. Remove and set aside.

    In the same pot, add onion, carrots, and celery. Sauté for 5 minutes until softened. Add garlic and cook for 1 more minute.

    Pour in broth and bring to a simmer. Add the browned meatballs back into the pot and cook for 10–15 minutes.

    Stir in the pasta and cook until al dente. Lower the heat and add heavy cream, Parmesan, and spinach. Simmer gently until spinach wilts and the soup thickens slightly.

    Ladle into bowls, garnish with fresh basil or parsley, and sprinkle extra Parmesan on top. Serve warm and enjoy every creamy, savory spoonful!
