Creamy Garlic Chicken Gnocchi Skillet

Ingredients (Serves 4):
1 lb (500g) potato gnocchi
2 tablespoons olive oil
2 chicken breasts, diced
Salt and pepper, to taste
3 tablespoons unsalted butter
4 garlic cloves, minced
1 cup heavy cream
1/2 cup chicken broth
1/4 teaspoon crushed red pepper flakes (optional)
2 cups fresh spinach
1/2 cup grated Parmesan cheese
Fresh parsley, for garnish
Directions:
Boil a large pot of salted water and cook the potato gnocchi according to package instructions. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Season diced chicken with salt and pepper. Cook for 5-6 minutes, stirring occasionally, until golden brown and fully cooked. Remove chicken and set aside.
In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
Stir in heavy cream, chicken broth, and red pepper flakes (if using). Simmer for 3-4 minutes until the sauce thickens slightly.
Add fresh spinach to the skillet and cook until wilted. Stir in Parmesan cheese until melted and creamy.
Return cooked chicken and gnocchi to the skillet. Toss everything together until fully coated in the rich garlic cream sauce.
Garnish with fresh parsley and extra Parmesan if desired. Serve hot for a cozy, comforting meal.
