    Hearty Pinto Bean, Green Chile & Beef Soup

    Warm up with this flavorful Pinto Bean, Green Chile & Beef Soup a protein-packed, fiber-rich meal made with lean beef, smoky spices, and creamy pinto beans. Perfect for cozy dinners or healthy meal prep!

    Ingredients:

    For the Soup:
    1 lb ground beef (lean preferred)
    2 cups cooked pinto beans (or 1 can, drained and rinsed)
    2 cups beef broth
    1 cup diced green chiles (mild or spicy, as desired)
    1 cup diced tomatoes (canned or fresh)
    1 small onion, finely chopped
    2 cloves garlic, minced
    1 tsp ground cumin
    1 tsp smoked paprika
    ½ tsp chili powder
    1 tbsp olive oil
    Salt and black pepper to taste
    For Garnish (optional):
    Fresh cilantro
    Lime wedges

    Directions:

    Brown the Beef:
    Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook, breaking it apart with a wooden spoon, until browned. Drain excess fat if necessary.
    Sauté Aromatics:
    Add onion and garlic to the pot and cook for 2–3 minutes until fragrant and softened.
    Add Flavor:
    Stir in diced green chiles, tomatoes, cumin, smoked paprika, and chili powder. Let cook for 2 minutes to release the flavors.
    Simmer the Soup:
    Add pinto beans and beef broth. Season with salt and pepper to taste. Bring to a boil, then reduce heat and simmer for 20 minutes to thicken and deepen the flavor.
    Serve & Enjoy:
    Taste and adjust seasoning if needed. Serve hot, topped with fresh cilantro and a squeeze of lime juice for brightness.
