Creamy Lasagna Soup Recipe

Ingredients:
1 lb ground beef or chicken sausage
1 small onion, chopped
3 cloves garlic, minced
4 cups chicken broth
2 cups heavy cream
1 can (14.5 oz) crushed tomatoes
8 oz lasagna noodles, broken into smaller pieces
1 tsp dried basil
1 tsp dried oregano
½ tsp red pepper flakes (optional)
Salt and pepper, to taste
1 cup ricotta cheese
½ cup grated Parmesan cheese
1½ cups shredded mozzarella cheese
Fresh parsley, chopped (for garnish)
Directions:
In a large pot, heat a little oil over medium heat. Add ground beef or chicken sausage and cook until browned. Drain any excess fat.
Add chopped onion and cook for 2–3 minutes until softened. Stir in garlic and cook for another 30 seconds until fragrant.
Pour in chicken broth, heavy cream, and crushed tomatoes. Stir well. Add lasagna noodles, basil, oregano, red pepper flakes, salt, and pepper.
Bring to a boil, then reduce to a simmer for 10–12 minutes, stirring occasionally until the noodles are tender.
Stir in ricotta, Parmesan, and half of the mozzarella. Mix until the cheeses melt and the soup turns thick, rich, and creamy.
Ladle into bowls, top with the remaining mozzarella, and garnish with chopped parsley. Serve warm and enjoy the creamy, cheesy comfort of lasagna without the fuss!
