Creamy Chicken Braised with Smooth Mashed Potatoes

Ingredients (Serves 4)
For the chicken and creamy sauce:
4 to 5 bone-in, skin-on chicken thighs
2 tbsp olive oil
1 finely chopped onion
2 minced garlic cloves
2 tbsp flour
2 cups (500 ml) chicken broth
1/2 cup heavy cream
1 tsp. 1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
Salt and black pepper
Fresh parsley or rosemary for garnish
For the homemade mashed potatoes:
800g potatoes
40g butter
100-150ml warm milk or cream
Salt, pepper, nutmeg (optional)
Preparation:
Seasoning and cooking the chicken
Season the chicken thighs with salt, pepper, paprika, garlic powder, and onion powder.
Heat the oil and sear the chicken for 4-5 minutes per side until golden brown. Set aside.
Sauce base
In the same pan, sauté the onion for 5-7 minutes until golden. Add the garlic for 1 minute.
Roux for creamy sauce
Add the flour and stir for 1-2 minutes.
Creamy Sauce
Gradually pour in the stock, whisking constantly. Scrape up any browned bits from the bottom of the pan. Simmer for 5-7 minutes.
Final Cooking
Return the chicken to the pan, coat with the sauce, cover, and simmer for 25-30 minutes. Add the cream for a rich and creamy sauce.
Homemade Mashed Potatoes
Cook the potatoes for 15-20 minutes, drain, mash, and add butter and warm milk. Season with salt, pepper, and nutmeg.
Pleasing and Serving:
Place a portion of mashed potatoes on a plate.
Arrange a chicken leg on top.
Generously coat with the creamy sauce.
Garnish with fresh parsley or rosemary.
Serve with steamed green vegetables for a complete meal.
