    Garlic Parmesan Chicken Meatloaf

    – 2 tbsp melted butter
    – 1 egg, lightly beaten

    – ½ tsp onion powder
    – Salt and black pepper, to taste

    Topping (optional):

    – 2 tbsp melted butter
    – 2 tbsp grated Parmesan
    – 1 tsp garlic powder
    – 1 tbsp chopped parsley

    Instructions

    1. Preheat oven: Set oven to 375°F (190°C). Line or grease a loaf pan.
    2. Mix ingredients: In a large bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, garlic, butter, egg, milk, parsley, and spices. Mix gently don’t overwork it.
    3. Shape & bake: Press mixture evenly into the loaf pan. Bake 40–45 minutes, until internal temperature reaches 165°F (74°C).
    4. Add garlic butter topping: Combine butter, Parmesan, garlic powder, and parsley. Brush on top and bake 5–10 minutes more for a golden crust.
    5. Rest & serve: Let rest 5–10 minutes before slicing. Serve your Garlic Parmesan Chicken Meatloaf with mashed potatoes, roasted vegetables, or a side salad.
