Ingredients:

24 ladyfinger cookies

1 cup strong brewed coffee, cooled

8 oz (225 g) mascarpone cheese

1/2 cup (120 ml) heavy cream

1/2 cup (60 g) powdered sugar

2 tablespoons cocoa powder (for dusting)

3 oz (85 g) dark chocolate, melted

1 teaspoon vanilla extract (optional)

Instructions:

Brew a cup of strong coffee and let it cool completely. You can add a few drops of vanilla extract for extra flavor.

In a large bowl, whisk together mascarpone cheese, powdered sugar, and melted chocolate until smooth and creamy.

In a separate bowl, beat the heavy cream until soft peaks form. Gently fold the whipped cream into the mascarpone mixture until well combined.

Quickly dip each ladyfinger cookie into the cooled coffee (don’t soak too long or they’ll become mushy).
Arrange a layer of soaked ladyfingers at the bottom of your serving dish.

Spread half of the chocolate mascarpone cream evenly over the ladyfingers.
Repeat with another layer of coffee-soaked ladyfingers and the remaining cream.

Cover and refrigerate for at least 4 hours, or overnight for the best flavor and texture.

Just before serving, dust the top generously with cocoa powder and shave a bit of dark chocolate on top for a stunning finish.
