Cheesy Smothered Chicken with Bell Peppers & Orzo
A creamy, one-pan chicken dinner that melts in your mouth! Juicy chicken, colorful bell peppers, and tender orzo come together in a luscious mozzarella-Parmesan sauce for the ultimate comfort food. Perfect for busy weeknights when you crave something hearty, cheesy, and absolutely delicious.
Ingredients:
Chicken & Veggies
1 ½ lbs boneless, skinless chicken breasts (cut into bite-size pieces)
1 tbsp olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small onion, diced
3 cloves garlic, minced
Orzo & Liquid
1 cup orzo pasta (uncooked)
3 cups chicken broth
½ cup milk or half-and-half
Seasoning
1 tsp garlic powder
1 tsp onion powder
½ tsp smoked paprika
1 tsp Italian seasoning
Salt + black pepper, to taste
Creamy Cheese Sauce
1 ½ cups shredded mozzarella cheese
½ cup grated Parmesan cheese
2 tbsp butter
Optional Garnish
Fresh parsley
Crushed red pepper flakes
Directions:
Heat olive oil in a large skillet over medium heat. Add the chicken and season with garlic powder, onion powder, paprika, salt, and pepper. Cook until golden brown and fully cooked (about 5–7 minutes). Remove and set aside.
In the same skillet, add onion, bell peppers, and garlic. Sauté for 4–5 minutes until tender and fragrant.
Stir in orzo, chicken broth, and milk (or half-and-half). Bring to a gentle boil, then reduce heat to low. Cover and simmer for 10 minutes, until the orzo is tender and most liquid is absorbed.
Add butter, mozzarella, and Parmesan cheese. Stir until creamy and smooth. Return the chicken to the pan and mix until everything is coated in the cheesy sauce.
Sprinkle with fresh parsley and crushed red pepper. Serve warm and enjoy the melty, creamy goodness!
