    Creamy Tuscan Chicken Soup

    Enjoy a bowl of Creamy Tuscan Chicken Soup, a healthy chicken soup recipe packed with tender chicken, fresh spinach, vegetables, and Italian flavors. Perfect for family-friendly meals, cozy nights, or easy weeknight dinners, this hearty Tuscan soup is both comforting and nutritious.

    Ingredients:

    Proteins
    1–1½ lbs boneless, skinless chicken breasts or thighs, diced
    Vegetables & Aromatics
    ½ cup diced onions
    ½ cup diced carrots
    ½ cup diced celery
    3 garlic cloves, minced
    ¼ cup diced sundried tomatoes
    2½–3 cups fresh spinach
    Liquids & Dairy
    1 tsp olive oil
    6–8 cups chicken broth (homemade or low-sodium)
    1 cup heavy cream
    ½–1 cup grated Parmesan cheese
    Seasonings & Pasta
    2 tsp Italian seasoning, divided
    ¼ cup all-purpose flour
    2 tbsp tomato paste (optional)
    170g (6 oz) small pasta shells
    Salt and freshly ground black pepper, to taste

    Directions:

     

    Heat olive oil in a large pot over medium heat. Add diced chicken, season with salt, pepper, and 1 tsp Italian seasoning. Cook 5–7 minutes until golden and cooked through. Remove chicken and set aside.

    In the same pot, sauté onions, carrots, and celery for 5 minutes. Add garlic and sundried tomatoes, cooking 1 minute until fragrant.

    Sprinkle flour over the vegetables, stir to combine. Gradually add chicken broth while stirring. Add tomato paste if desired and bring to a simmer.

    Return chicken to the pot. Stir in pasta shells and cook 8–10 minutes until al dente.

    Reduce heat to low. Stir in heavy cream, Parmesan cheese, and fresh spinach. Cook until spinach wilts and cheese melts. Adjust seasoning with salt, pepper, and remaining Italian seasoning.

    Ladle Creamy Tuscan Chicken Soup into bowls. Garnish with extra Parmesan cheese. Serve with crusty bread or a side salad for a complete hearty dinner recipe.
