Ingredients:
For the Meatballs:
2 lbs ground turkey (or use lean ground beef if preferred)
1 large egg
¾ cup shredded mozzarella cheese
1 tsp onion powder
1 tsp garlic powder
1 tsp Italian seasoning
1 tsp salt
For the Casserole:
1 cup low-carb tomato sauce (no added sugar)
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
Fresh basil or parsley, for garnish (optional)
Directions:
Set to 375°F (190°C) and lightly grease a baking or casserole dish.
In a large bowl, combine ground turkey, egg, mozzarella, and seasonings. Mix well and shape into 1–2 inch meatballs.
Arrange them in the baking dish and bake for 20–25 minutes, or until golden and fully cooked.
