Stuffed Pepper Casserole
This easy stuffed pepper casserole brings together all the delicious flavors of traditional stuffed peppers without the extra prep work! Ingredients:
1 lb ground beef
2 bell peppers, chopped
1 onion, finely chopped
3 cloves garlic, minced
1 tbsp Worcestershire sauce
1 (15 oz) can low-sodium beef broth
1 (15 oz) can diced tomatoes
1 cup uncooked long-grain white rice
1 tbsp Italian seasoning
1 tsp salt
½ tsp black pepper
¾ cup shredded mozzarella cheese
¾ cup shredded cheddar cheese
Instructions:
In a large skillet, cook ground beef over medium heat until browned, breaking it apart as it cooks.
Add onions and bell peppers; sauté for 5–10 minutes until softened.
Stir in garlic and cook for 1–2 minutes, until fragrant.
Add Worcestershire sauce, beef broth, diced tomatoes, rice, Italian seasoning, salt, and black pepper.
Mix well and bring to a boil.
Reduce heat to low, cover, and simmer for about 20 minutes, stirring halfway through, until the rice is tender.
Stir in half the cheese until melted and creamy.
Sprinkle the remaining cheese on top, cover, and let melt. (Optional: broil for a golden, bubbly finish.)
Remove from heat and serve warm.
