Hearty Beef Barley Soup

Ingredients:
2 pounds beef chuck, cubed
3 tablespoons olive oil
1 medium onion, diced
2 ribs celery, diced
4 medium carrots, diced
3 cloves garlic, minced
6 cups low-sodium beef broth
1 tablespoon Worcestershire sauce
3 sprigs fresh thyme (or 1 teaspoon dried thyme)
1 cup pearl barley
Salt and black pepper, to taste
¼ cup fresh parsley, minced
Directions:
Heat olive oil in a large soup pot over medium-high heat. Add beef cubes and brown on all sides. Remove and set aside.
In the same pot, add onion, celery, and carrots. Cook 5 minutes until softened. Add garlic and cook 1 minute more.
Return beef to the pot. Add beef broth, Worcestershire sauce, thyme, barley, salt, and pepper. Stir well.
Bring to a boil, then reduce heat to low. Cover and simmer for 1 to 1½ hours, until beef is tender and barley is fully cooked.
Stir in chopped parsley just before serving.
