Ingredients:

For the Soup Base:

1 medium onion (or shallots for a milder flavor)
2 tbsp olive oil (or any neutral oil)
3½ cups vegetable broth (homemade adds extra depth!)
1 medium jalapeño pepper (seeded for mild heat or swap with bell pepper)
1 cup corn kernels (fresh, canned, or frozen)
¾ cup dried red lentils (or substitute part with black beans)
15 oz tomato sauce (or diced tomatoes for chunkier texture)
1 medium bell pepper (red, green, or yellow your choice)

¾ cup salsa (mild or spicy, depending on your taste)
15 oz black beans, drained and rinsed
15 oz red beans, drained and rinsed

Instructions:

Heat olive oil in a skillet over medium heat. Add onion and jalapeño; cook until softened and fragrant.

In your crockpot, add the sautéed veggies, vegetable broth, corn, lentils, tomato sauce, and bell pepper. Stir well.

Mix in the salsa, black beans, and red beans.

Add smoked paprika, garlic powder, cumin, cayenne, salt, and pepper. Stir to combine.
