    Hearty Crockpot Vegetarian Tortilla Soup

    A cozy, protein-packed, and flavor-rich vegetarian soup perfect for any night of the week! This easy slow cooker recipe brings together lentils, beans, veggies, and bold Mexican-inspired spices for a satisfying, wholesome meal that everyone will love.

    Ingredients:

    For the Soup Base:

    1 medium onion (or shallots for a milder flavor)
    2 tbsp olive oil (or any neutral oil)
    3½ cups vegetable broth (homemade adds extra depth!)
    1 medium jalapeño pepper (seeded for mild heat or swap with bell pepper)
    1 cup corn kernels (fresh, canned, or frozen)
    ¾ cup dried red lentils (or substitute part with black beans)
    15 oz tomato sauce (or diced tomatoes for chunkier texture)
    1 medium bell pepper (red, green, or yellow your choice)

    For the Hearty Goodness:

    ¾ cup salsa (mild or spicy, depending on your taste)
    15 oz black beans, drained and rinsed
    15 oz red beans, drained and rinsed

    For the Seasoning:

    1 tsp smoked paprika (or regular paprika)
    1 tsp garlic powder (or 2 cloves fresh minced garlic)
    ½ tsp ground cumin (or try coriander for variation)
    ¼ tsp cayenne pepper (adjust to your spice level)
    Salt and pepper, to taste

    For Creaminess:

    ½ cup light cream cheese (or dairy-free yogurt alternative)

    Optional Toppings:

    Sliced avocado
    Shredded cheddar
    Fresh cilantro
    Diced jalapeños
    Chopped red onion
    Crushed tortilla chips
    Sour cream

    Instructions:

    Heat olive oil in a skillet over medium heat. Add onion and jalapeño; cook until softened and fragrant.

    In your crockpot, add the sautéed veggies, vegetable broth, corn, lentils, tomato sauce, and bell pepper. Stir well.

    Mix in the salsa, black beans, and red beans.

    Add smoked paprika, garlic powder, cumin, cayenne, salt, and pepper. Stir to combine.

    Cover and cook on low for 6–8 hours or high for 3–4 hours, until lentils are tender and flavors meld beautifully.

    About 30 minutes before serving, stir in the light cream cheese until fully melted and creamy. Adjust seasoning if needed.

    Ladle into bowls and top with your favorite toppings tortilla chips, avocado, cheddar, sour cream, and cilantro for the ultimate comforting bite.
