Ingredients You’ll Need:

1 lb ground beef (80/20 blend for rich flavor)
1 large onion, chopped
2 cloves garlic, minced
1 green bell pepper, chopped
1 (15 oz) can diced tomatoes, undrained
1 (15 oz) can kidney beans, rinsed and drained
1 (15 oz) can pinto beans, rinsed and drained
1 (10 oz) can diced tomatoes with green chilies
2 tablespoons chili powder
1 teaspoon ground cumin
½ teaspoon dried oregano
¼ teaspoon cayenne pepper (add more for extra heat)
Salt and black pepper, to taste
1 tablespoon olive oil

Instructions:

 

In a large pot or Dutch oven, heat olive oil over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat.

Add chopped onion and green bell pepper. Cook for 4–5 minutes until softened. Stir in minced garlic and sauté for 1 minute until fragrant.

Sprinkle in chili powder, cumin, oregano, cayenne pepper, salt, and black pepper. Stir well to coat the meat and veggies, letting the spices toast for 1 minute.

Pour in diced tomatoes, kidney beans, pinto beans, and diced tomatoes with green chilies. Stir everything together, bring to a simmer, then reduce the heat to low. Cover and cook for 30–60 minutes, stirring occasionally to let the flavors meld beautifully.
