    Creamy Sausage and Mushroom Tortellini Soup

    A Comforting, Flavor-Packed Italian-Inspired Soup Perfect for Cozy Nights!

    Indulge in this Creamy Sausage and Mushroom Tortellini Soup a rich, hearty, and satisfying dish made with Italian sausage, mushrooms, spinach, and cheese tortellini in a luscious creamy broth. Perfect for busy weeknights or chilly evenings!

    Ingredients:

    1 lb Italian sausage, crumbled
    8 oz mushrooms, sliced
    4 cups chicken broth
    1 cup heavy cream
    1 package (9 oz) refrigerated cheese tortellini
    2 cups fresh spinach, chopped
    1 small onion, diced
    2 cloves garlic, minced
    2 tablespoons olive oil
    Salt and pepper to taste
    Grated Parmesan cheese, for serving

    Instructions:

    Sauté the aromatics: In a large soup pot, heat olive oil over medium heat. Add diced onion and minced garlic; cook until fragrant and softened.
    Brown the sausage: Add the crumbled Italian sausage and cook until fully browned, breaking it up with a spoon.
    Add mushrooms: Stir in the sliced mushrooms and cook until tender and golden.
    Build the base: Pour in the chicken broth and bring to a gentle simmer.
    Cook the tortellini: Add cheese tortellini to the pot and cook according to package directions (about 3–5 minutes) until tender.
    Make it creamy: Stir in the heavy cream and chopped spinach. Let it simmer until the spinach wilts and the soup thickens slightly.
    Season and serve: Add salt and pepper to taste. Ladle into bowls and top with freshly grated Parmesan cheese.
