Ingredients:

4 boneless, skinless chicken breasts
Salt and black pepper, to taste
1 tablespoon olive oil
2 tablespoons butter
1 small onion, finely chopped
2 garlic cloves, minced
300g fresh mushrooms, sliced (white or cremini)
1 teaspoon dried thyme (or Italian seasoning)
1 cup heavy cream
1/2 cup halal-certified chicken broth
2 tablespoons fresh parsley, chopped

Instructions:

 

Pat the chicken breasts dry and season generously with salt and black pepper on both sides.

In a large skillet, heat olive oil over medium-high heat. Add the chicken and sear for about 5 minutes per side until golden brown. Remove and set aside.

In the same skillet, melt butter. Add the chopped onion and minced garlic, cooking until fragrant and translucent.

Add the sliced mushrooms and thyme. Cook for 5–7 minutes until the mushrooms are tender and lightly browned.

Pour in the heavy cream and chicken broth. Stir well and bring to a gentle simmer. Let it cook for 10 minutes until the sauce thickens slightly.

Return the chicken breasts to the pan. Spoon the creamy mushroom sauce over the top and simmer for another 5–10 minutes, until the chicken is fully cooked and the flavors meld beautifully.

Sprinkle with freshly chopped parsley and serve warm with mashed potatoes, rice, or pasta.
