Crockpot Garlic Creamy Pepper Jack Chicken & Sausage Macaroni

Ingredients:
1 lb chicken sausage, sliced
1 lb boneless, skinless chicken breasts, diced
12 oz elbow macaroni (uncooked)
2 cups chicken broth
1 cup heavy cream
1½ cups shredded Pepper Jack cheese
½ cup grated Parmesan cheese (plus extra for topping)
1 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
1 tsp Italian seasoning
Salt & black pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
Heat olive oil in a skillet over medium heat. Add diced onion and cook until soft and translucent. Stir in garlic and cook for 1 minute until fragrant.
Transfer the sautéed onion and garlic into your slow cooker. Add chicken sausage, chicken breasts, elbow macaroni, chicken broth, and heavy cream. Stir well.
Mix in Italian seasoning, salt, and black pepper until evenly combined.
Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is cooked through and pasta is tender.
About 15 minutes before serving, stir in Pepper Jack and Parmesan cheese. Let melt into the creamy pasta sauce.
Top with fresh parsley and extra Parmesan cheese. Serve warm and enjoy the cheesy goodness!
