    Anti-Inflammatory Golden Cauliflower Soup

    Anti-Inflammatory Golden Cauliflower Soup

    A vibrant, anti-inflammatory soup packed with turmeric, cumin, cauliflower, and fresh vegetables. This golden cauliflower soup is creamy, comforting, and perfect as a detox soup or healthy weeknight dinner.

    Ingredients:

    1 tablespoon olive oil
    1 medium onion, chopped
    3 garlic cloves, minced
    2 large carrots, sliced
    2 celery stalks, sliced
    2 cups cauliflower florets
    2 cups green cabbage, chopped
    1 teaspoon ground turmeric
    1/2 teaspoon ground cumin
    1/2 teaspoon smoked paprika
    1/4 teaspoon chili flakes (optional)
    Salt and black pepper, to taste
    6 cups low-sodium vegetable broth
    1/4 cup fresh parsley, chopped
    Juice of 1/2 lemon

    Instructions:

    Sauté aromatics Heat olive oil in a large pot. Add onion and cook 3–4 minutes until soft.

    Add vegetables Stir in garlic, carrots, and celery; cook another 5 minutes.

    Season with spices Add cauliflower, cabbage, turmeric, cumin, paprika, chili flakes, salt, and pepper. Stir and cook 2–3 minutes.

    Simmer the soup Pour in vegetable broth, bring to a boil, then reduce heat. Let simmer for 20–25 minutes until veggies are tender.

    Finish with lemon & herbs Stir in lemon juice and parsley. Serve hot, garnished with extra parsley or chili flakes.
