Thai Chicken Stir-Fry with Vegetables and Jasmine Rice
This easy Thai Chicken Stir-Fry is a flavorful, healthy, and colorful dish perfect for busy weeknights. Tender chicken, crisp bell peppers, broccoli, and snap peas are tossed in a savory-sweet Thai stir-fry sauce with soy sauce, fish sauce, ginger, garlic, and a splash of lime. Ingredients:
1 pound boneless, skinless chicken breasts, sliced thin
2 tbsp vegetable oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup broccoli florets
1 cup snap peas
3 cloves garlic, minced
1 tbsp fresh ginger, minced
3 tbsp soy sauce
1 tbsp fish sauce
1 tbsp brown sugar
1 tsp cornstarch + 1 tbsp water (slurry)
1 tbsp lime juice
Fresh cilantro, for garnish
Steamed jasmine rice, for serving
Directions:
Cook the chicken Heat oil in a wok or skillet over medium-high heat. Add chicken strips and stir-fry for 5–7 minutes until cooked through. Remove and set aside.
Sauté aromatics In the same skillet, add garlic and ginger. Stir for 30 seconds until fragrant.
Add vegetables Toss in bell peppers, broccoli, and snap peas. Stir-fry for 3–4 minutes until tender-crisp.
Make the stir-fry sauce In a small bowl, whisk soy sauce, fish sauce, brown sugar, and cornstarch slurry. Return chicken to the skillet, pour in the sauce, and cook 2–3 minutes until thickened.
Finish & serve Remove from heat, stir in lime juice, and garnish with cilantro. Serve hot over jasmine rice.
