Ingredients (Serves 4):

For the Crispy Chicken:
4 chicken fillets
100 g all-purpose flour
2 large eggs, beaten
100 g panko breadcrumbs
50 g grated Parmesan cheese
1 tsp garlic powder
½ tsp paprika
Salt and pepper, to taste
Olive oil or butter, for frying
For the Creamy Mushroom Parmesan Sauce:
250 g fresh mushrooms, sliced
2 garlic cloves, minced
30 g butter
250 ml heavy cream (whole liquid cream)
50 g grated Parmesan cheese
1 tbsp fresh parsley, minced
½ tsp thyme (optional)
Salt and pepper, to taste

Instructions:

1. Prepare the Chicken
Flatten the chicken fillets to an even thickness (about 1.5 cm) using a meat mallet.
Set up 3 bowls: one with flour, one with beaten eggs, and one with panko mixed with Parmesan, garlic powder, paprika, salt, and pepper.
Dredge each chicken fillet in flour, dip in egg, then coat in the panko-parmesan mixture. Press gently so it sticks well.

2. Cook the Chicken
Heat olive oil or butter in a large skillet over medium heat.
Fry chicken fillets for 4–5 minutes per side until golden brown and crispy.
Place cooked chicken on a plate lined with paper towels.

3. Make the Parmesan Mushroom Sauce
In the same pan, melt butter over medium heat.
Add garlic and mushrooms; sauté for 5 minutes until tender and golden.
Stir in cream, Parmesan, and thyme. Let simmer for 3–4 minutes until sauce thickens.
Season with salt, pepper, and add parsley.

4. Assemble and Serve
Return crispy chicken to the pan, coating each piece with the creamy mushroom sauce.
Serve hot with mashed potatoes, rice pilaf, roasted veggies, or a fresh green salad.
