    Galician Empanadas Recipe

    Ingredients:

    2 sheets puff pastry (or shortcrust pastry) perfect for flaky Spanish empanadas
    2 onions, sliced
    1 red bell pepper, diced
    1 green bell pepper, diced
    2 ripe tomatoes, chopped
    200 g canned tuna (for tuna empanadas) or swap with shredded chicken, minced meat, or shrimp
    2 tbsp olive oil
    Salt & freshly ground black pepper
    Fresh parsley, chopped (for garnish)
    1 egg yolk (for brushing

     

    Directions:

     

    slice onions, dice peppers, and chop tomatoes.

    Cook the filling: sauté onions in olive oil, then add peppers and tomatoes. Simmer for 10 minutes.

    Add tuna: stir in the drained canned tuna, season, and let cool slightly.

    Shape empanadas: cut pastry into 10–12 cm circles and add a spoonful of filling.

    Seal the empanadas: fold into half-moon shapes and press edges with a fork.

    Brush with egg yolk: this gives your Spanish empanadas a golden crust.

    Bake: place on a baking sheet and cook at 200°C for 25–30 minutes until golden and crispy.
