Ingredients:

2 tbsp butter
1 onion, finely chopped
2 cloves garlic, minced
2 celery stalks, diced
2 medium potatoes, diced
4 cups seafood broth (or fish stock)
1 cup heavy cream
½ lb haddock, cut into chunks
½ lb shrimp, peeled and deveined
½ lb scallops
½ cup cooked lobster meat (optional, for authentic Nova Scotia flavor)
1 cup corn kernels
½ tsp dried thyme
Salt and pepper, to taste
2 tbsp fresh parsley, chopped

 

Directions:

Sauté the base: In a large pot, melt butter over medium heat. Add onion, garlic, and celery, cooking until soft and fragrant.

Cook the potatoes: Add diced potatoes and seafood broth. Bring to a boil, then reduce heat and simmer until potatoes are tender (about 10 minutes).

Make it creamy: Pour in heavy cream, stirring gently to combine.

Add fresh seafood: Stir in haddock, shrimp, scallops, and lobster (if using). Simmer for 5–7 minutes until seafood is cooked through.

Season & finish: Add corn, thyme, salt, and pepper. Cook for another 2 minutes.

Garnish & serve: Top with fresh parsley and serve piping hot with crusty bread.
