    Birria Tacos with Consomé – Authentic Mexican Beef Tacos Recipe
    Birria Tacos with Consomé are a juicy, cheesy, crispy Mexican street food sensation that went viral on TikTok for a reason! These slow-cooked beef birria tacos are dunked in rich consomé and pan-fried to perfection. Whether you’re looking for an authentic Mexican recipe or a flavorful comfort dish, these tacos will satisfy every craving.

    Ingredients for Birria Tacos
    For the Birria (Beef Stew):
    2 lbs beef chuck roast (or a mix of beef and short ribs for extra flavor)

    4 dried guajillo chiles, stems and seeds removed

    2 dried ancho chiles, stems and seeds removed

    2 dried pasilla chiles, stems and seeds removed

    1 cup beef broth

    1/2 cup tomato puree

    1/4 cup apple cider vinegar

    1 onion, roughly chopped

    4 garlic cloves

    1 tsp dried oregano

    1 tsp ground cumin

    1 tsp smoked paprika

    1/2 tsp ground cinnamon

    Salt and pepper, to taste

    2 bay leaves

    For the Tacos:
    Corn tortillas

    Chopped onions

    Fresh cilantro, chopped

    Lime wedges

    Shredded cheese (optional, for cheesy birria tacos)

    How to Make Birria Tacos with Consomé
    Step 1: Prepare the Dried Chiles
    Toast guajillo, ancho, and pasilla chiles in a dry skillet over medium heat for 1–2 minutes until fragrant.
    Soak them in hot water for 15–20 minutes until softened.

    Step 2: Make the Birria Sauce
    In a blender, combine softened chiles, tomato puree, onion, garlic, apple cider vinegar, oregano, cumin, smoked paprika, cinnamon, and a pinch of salt.
    Blend until smooth and pour into a large pot or slow cooker.

    Step 3: Cook the Birria Beef
    Cut beef into large chunks, season with salt and pepper, and add to the sauce.
    Pour in beef broth, add bay leaves, and simmer on low for 3–4 hours (or 6–8 hours in a slow cooker) until the beef is fall-apart tender.

    Step 4: Prepare the Consomé
    Remove the meat, shred it with forks, and strain the cooking liquid to make a rich, flavorful birria consomé dipping sauce. Keep warm.

    Step 5: Assemble the Birria Tacos
    Heat a skillet or griddle. Dip corn tortillas in consomé, then place them on the skillet.
    Fill with shredded beef (and cheese if making quesabirria tacos), fold, and cook until crispy and golden.

    Step 6: Serve the Tacos
    Serve your authentic birria tacos hot with a small bowl of consomé for dipping.
    Garnish with onions, cilantro, and lime wedges for the ultimate Mexican taco night.
