Cinnamon Roll Cheesecake Recipe
This Cinnamon Roll Cheesecake combines the rich creaminess of a classic cheesecake with the warm, cozy flavors of cinnamon rolls. With a buttery graham cracker crust, velvety cream cheese filling, and a sweet cinnamon swirl topped with puff pastry, this dessert is pure indulgence! Ingredients:
For the Crust:
2 cups graham cracker crumbs
½ cup unsalted butter, melted
1 teaspoon ground cinnamon
Cheesecake Filling:
3 packages (8 oz each) cream cheese, softened
1 cup granulated sugar
½ cup sour cream
2 large eggs (UPDATE: use 2 instead of 3 for best texture)
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
Cinnamon Swirl (Whirlpool):
¼ cup unsalted butter, melted
½ cup brown sugar
1 tablespoon ground cinnamon
3 strips puff pastry (pre-baked and rolled together)
Instructions:
Step 1 Prep the Oven & Pan
Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
Step 2 Make the Crust
Mix graham cracker crumbs, melted butter, and cinnamon until combined. Press firmly into the bottom and slightly up the sides of the pan. Bake for 8–10 minutes, then cool completely.
Step 3 Make the Cheesecake Filling
Beat softened cream cheese until smooth. Add sugar and mix well. Blend in sour cream, eggs, vanilla, and cinnamon on low speed (don’t overmix). Pour filling over the cooled crust.
Step 4 Prepare Cinnamon Swirl
In a bowl, mix melted butter, brown sugar, and cinnamon. Pipe into strips of puff pastry, spread, and roll into a spiral. Bake puff pastry separately until lightly golden, then place it on top of the cheesecake.
Step 5 Bake the Cheesecake
Bake at 325°F for 55 minutes, or until the center is mostly set with a slight jiggle. Then bake again with the puff pastry spiral at 350°F for an additional 10–15 minutes.
Step 6 Cool & Chill
Turn off oven, crack the door, and let cheesecake rest for 1 hour. Cool completely, then refrigerate for at least 4 hours or overnight.
