Ingredients:
2 lbs ground beef (or ground turkey for a lighter version)
1 small onion, diced
1 bell pepper, diced
2 garlic cloves, minced
24 oz beef broth
28 oz diced or crushed tomatoes
2 packets taco seasoning
4 oz salsa
4 oz cream cheese, softened
1 cup heavy cream
2 cups shredded cheddar cheese
Directions:
1. In a large Dutch oven or soup pot, cook the ground beef over medium heat until fully browned. Drain off excess grease.
2. Add diced onion, bell pepper, and garlic. Cook 5–7 minutes until fragrant and softened.
3. Stir in beef broth, diced tomatoes, taco seasoning, and salsa. Bring to a simmer.
4. Add softened cream cheese and stir until melted. Pour in heavy cream and mix until smooth and creamy.
5. Gradually stir in cheddar cheese until melted into the soup. Taste and adjust seasoning with salt and pepper.
