Ingredients:
4 boneless, skinless chicken breasts
2 tbsp balsamic vinegar
2 tbsp extra virgin olive oil
2 cloves garlic, minced
1 tsp dried oregano
Salt and black pepper, to taste
4 cups fresh spinach leaves
1 cup cherry tomatoes, halved
1/4 cup grated Parmesan cheese (optional)
Instructions:
1. Preheat oven to 400°F (200°C).
2. In a small bowl, whisk together balsamic vinegar, olive oil, garlic, oregano, salt, and pepper.
3. Coat each chicken breast thoroughly with the balsamic mixture and place in a baking dish.
4. Bake for 20 minutes until chicken is partially cooked.
5. While the chicken bakes, heat a skillet over medium heat and sauté spinach and cherry tomatoes for 3–4 minutes until the spinach wilts and the tomatoes soften.
6. Remove chicken from the oven and top with the sautéed spinach and tomatoes.
7. Return to the oven and bake an additional 10–15 minutes, or until the chicken reaches 165°F (75°C) internally.
8. Optional: Sprinkle with Parmesan cheese before serving for added flavor.
