For the Creamy Garlic Herb Chicken & Vegetables:

1 chicken breast, cut into bite-size pieces

2–3 cloves garlic, finely minced

1 cup mixed bell peppers (red, green, yellow), sliced

1 cup broccoli florets

1–2 tbsp olive oil or butter

½ cup heavy cream (or coconut milk for dairy-free)

1–2 tbsp fresh parsley or chopped chives

Salt & black pepper to taste

For Serving:

1 cup cooked white rice (or brown rice / couscous for variation)

 

Instructions:

1. Heat olive oil or butter in a large skillet over medium-high heat. Add the chicken and cook until golden and fully cooked. Remove and set aside.

2. In the same skillet, add minced garlic and cook until fragrant. Add the sliced bell peppers and broccoli and sauté until crisp-tender.

3. Lower the heat and stir in the heavy cream. Season with salt and black pepper.

4. Return the cooked chicken to the skillet and stir until all the pieces are coated in the creamy garlic herb sauce.

5. Sprinkle with chopped parsley or chives and serve hot over cooked white rice.
