    Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken Breast Recipe

    Looking for a healthy stuffed chicken breast recipe that’s loaded with flavor and melted cheese? This Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken is the perfect weeknight dinner juicy, savory, and bursting with Mediterranean-inspired flavors!

     

    Ingredients (Serves 4)

    4 boneless, skinless chicken breasts (pounded to ½-inch thickness)

    1 roasted red bell pepper, diced

    1 cup fresh spinach, finely chopped

    ½ cup shredded mozzarella cheese

    ¼ cup grated Parmesan cheese

    ¼ cup breadcrumbs

    1 egg, beaten

    ¼ teaspoon salt

    ¼ teaspoon black pepper

     

    Instructions:

    1. Make the Filling
    In a bowl, mix together the roasted red pepper, chopped spinach, mozzarella cheese, Parmesan cheese, breadcrumbs, beaten egg, salt, and black pepper until well combined.

    2. Stuff the Chicken Breasts
    Use a sharp knife to cut a pocket in each chicken breast. Spoon the filling mixture inside each pocket and secure with toothpicks to keep the filling in place.

    3. Bake the Stuffed Chicken
    Place the stuffed chicken breasts on a parchment-lined baking sheet. Roast in a preheated 400°F (200°C) oven for 25–30 minutes, or until the chicken is fully cooked through and the juices run clear.

    4. Serve & Enjoy
    Remove toothpicks and serve with roasted vegetables, mashed potatoes, or a fresh salad for a complete meal.

     

    Tips & Variations

    Add a pinch of red pepper flakes for a spicy kick

    Swap roasted red pepper for sun-dried tomatoes for a richer flavor

    Serve with sour cream or herbed Greek yogurt for added creaminess

    Great for meal prep, low-carb dinners, and high-protein diets
