Creamy Spicy Sausage Tortellini Soup Recipe

Ingredients:
1 small yellow onion, chopped
3 cloves garlic, minced
1 package spicy Italian sausage (casings removed)
3 tbsp all-purpose flour
Pinch of crushed red pepper flakes
½ tsp dried oregano
½ tsp dried basil
Pinch of cayenne pepper
Salt & pepper to taste
½ tsp onion powder
½ tsp garlic powder
½ tsp hot sauce
1 teaspoon mustard or mustard powder (enhances flavor!)
2 cartons chicken broth
1 cup heavy cream
1 Parmigiano rind (or ¼ cup grated Parmesan cheese)
1 family-sized pack cheese tortellini
3–4 cups baby spinach
Instructions:
1. In a large soup pot, sauté the chopped onion and minced garlic until fragrant.
2. Add the spicy Italian sausage and cook until browned. Drain off excess grease.
3. Stir in the flour and cook for 1–2 minutes to form a roux.
4. Add the crushed red pepper flakes, dried oregano, dried basil, cayenne pepper, salt, pepper, onion powder, garlic powder, hot sauce, and mustard.
5. Pour in the chicken broth and heavy cream. Add the Parmesan rind (or grated Parmesan).
6. Simmer for about 45 minutes to let all the flavors meld together. Remove the Parmesan rind.
7. Separately, cook the cheese tortellini according to package instructions. Add it to the soup.
8. Stir in the baby spinach and cook for 30 seconds to 1 minute until wilted.
