Mediterranean Fish Soup Recipe

Ingredients:
1 lb (450g) white fish fillets (cod, halibut, or sea bass), cut into chunks
1 tbsp extra virgin olive oil
1 onion, chopped
2 garlic cloves, minced
2 carrots, diced
2 celery stalks, diced
1 bell pepper, chopped
1 (14 oz) can diced tomatoes
4 cups fish broth or vegetable broth
1 tsp paprika
½ tsp red chili flakes (optional)
Salt & black pepper, to taste
Juice of ½ lemon, plus extra lemon wedges for serving
Fresh parsley, chopped (for garnish)
Instructions:
In a large soup pot, heat the olive oil over medium heat. Add chopped onion, minced garlic, carrots, celery, and bell pepper. Cook for 5–7 minutes until aromatic and softened.
Stir in the diced tomatoes, fish or vegetable broth, paprika, chili flakes, salt, and black pepper. Simmer for 10 minutes to allow the flavors to develop.
Gently add the white fish chunks into the simmering broth and cook uncovered for 6–8 minutes, or until the fish is firm and flaky.
Stir in fresh lemon juice to brighten the flavor profile. Garnish with chopped parsley.
