    Hearty Beef Pot Roast with Potatoes & Carrots

    Make this delicious and juicy Beef Pot Roast for a cozy family dinner! This easy one-pot recipe combines slow cooked chuck roast, tender potatoes, sweet carrots, and a rich beef gravy, resulting in a comforting, melt-in-your-mouth pot roast perfect for Sunday supper or holiday meals.

     

    Ingredients:

    3–4 lbs beef chuck roast

    2 tbsp olive oil

    1 large onion, chopped

    4 cloves garlic, minced

    4 cups beef broth (low-sodium)

    2 tbsp tomato paste

    1 tbsp Worcestershire sauce

    1 tsp dried thyme

    1 tsp dried rosemary

    2 bay leaves

    Salt and black pepper, to taste

    Vegetables

    6 large carrots, peeled and cut into chunks

    4–5 medium potatoes, cut into large cubes

    Optional: 2 stalks celery, sliced

     

    Instructions:

    1. Season and Sear Pat the beef dry and season generously with salt and black pepper. In a large Dutch oven or heavy pot, heat olive oil over medium-high heat and sear beef roast on all sides until browned.

    2. Add Aromatics Add chopped onions and cook until softened. Stir in minced garlic and cook 1 minute.

    3. Add Liquids & Herbs Stir in tomato paste, Worcestershire sauce, dried thyme, dried rosemary, and bay leaves. Pour in the beef broth and bring to a gentle boil.

    4. Simmer Reduce heat to low, cover the pot, and simmer for 2–2.5 hours until the beef is tender.

    5. Add Vegetables Add chopped potatoes, carrots (and celery if using) and continue cooking for 30–40 minutes, or until vegetables are soft and the beef is fall-apart tender.

    6. Serve Remove bay leaves. Shred beef into large chunks and stir into the gravy. Serve hot with mashed potatoes or crusty bread.
