Ingredients:
2 cups fresh corn kernels (from about 3 ears) or frozen corn, thawed
1 ripe avocado, diced
1 cup cherry tomatoes, halved
1/4 cup red onion, finely diced
2 tbsp fresh cilantro, chopped
2 tbsp extra virgin olive oil
1 tbsp fresh lime juice
Salt & black pepper, to taste
Directions:
1. In a large mixing bowl, combine the corn, avocado, cherry tomatoes, red onion, and cilantro.
2. In a small bowl, whisk together olive oil, lime juice, salt, and pepper until well combined.
