Hearty French Onion Soup with Tender Beef & Crispy Cheese-Topped Baguette

Warm up with this classic French onion soup with beef a comforting, rich, and savory dish featuring caramelized onions, succulent beef stew meat, flavorful broth, and golden baguette slices topped with bubbling Gruyère and Parmesan cheese. Perfect for cold nights or an impressive dinner starter!

 

Ingredients:

2 large onions, thinly sliced

1 lb beef stew meat

4 cups beef broth

2 tbsp olive oil

2 tsp dried thyme

2 bay leaves

2 cloves garlic, minced

Salt & pepper, to taste

2 tbsp flour (optional, for thicker soup)

4 slices French baguette

1 cup shredded Gruyère cheese

1 cup shredded Parmesan cheese

 

Instructions:

1. Heat olive oil in a large pot over medium heat. Add beef stew meat and sear until browned on all sides. Remove and set aside.

2. In the same pot, add sliced onions and cook on low heat for 20–30 minutes, stirring occasionally, until deeply golden and sweet.

3. Stir in minced garlic, thyme, bay leaves, salt, and pepper. Cook for 1 minute until fragrant.

4. Return browned beef to the pot, pour in beef broth, and bring to a gentle simmer. Cook for 45–60 minutes to allow the flavors to meld. (For a thicker consistency, stir in flour and cook for a few extra minutes.)

5. Toast the baguette slices in a broiler or skillet until golden and crispy.

6. Ladle the soup into oven-safe bowls, top with a toasted baguette slice, sprinkle generously with Gruyère and Parmesan, and broil for 2–3 minutes until the cheese is melted and bubbly.
