    Creamy Garlic Chicken with Golden Roasted Baby Potatoes

    Indulge in this creamy garlic chicken served with crispy golden roasted baby potatoes the ultimate comfort food dinner that’s easy to make in under 45 minutes! Juicy, tender chicken breast pieces are smothered in a rich Parmesan cream sauce, paired with perfectly seasoned potatoes for a meal your whole family will love.

    Ingredients:

    For the Garlic Chicken

    Boneless, skinless chicken breast pieces

    2 tbsp olive oil

    Salt & black pepper

    Fresh parsley for garnish

    For the Roasted Baby Potatoes

    1 lb baby potatoes, halved

    2 tbsp olive oil

    Fresh thyme

    Salt & black pepper

    For the Creamy Garlic Parmesan Sauce

    2 tbsp unsalted butter

    4 cloves garlic, minced

    1 cup chicken broth

    1 cup heavy cream

    ½ cup Parmesan cheese, grated

    Black pepper to taste

     

    Instructions:

    1. Roast the Baby Potatoes: Preheat oven to 400°F (200°C). Toss halved baby potatoes with olive oil, fresh thyme, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until golden and crispy.

    2. Cook the Chicken: Season chicken breast pieces with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken on both sides until golden brown, about 4–5 minutes per side. Remove and set aside.

    3. Make the Cream Sauce: In the same skillet, melt butter, then sauté minced garlic for 30 seconds until fragrant. Stir in chicken broth, heavy cream, and Parmesan cheese. Simmer for 3–4 minutes until thickened. Season with black pepper.

    4. Combine & Serve: Return the chicken to the skillet and coat with the creamy garlic Parmesan sauce. Simmer for 5 minutes until fully cooked through. Serve alongside roasted potatoes and garnish with fresh parsley.

     

    Pro Tip: For an extra burst of flavor, roast the potatoes with a couple of crushed garlic cloves for a subtle, caramelized garlic aroma.
